Mexico - Aged for three and a half years in former Scotch barrels, this extra añejo, introduced in November 2015, has an amber hue and mixes honey and pepper in the aromatics, plus a rich maple threat. It's velvety, well-structured and mouthwatering, showing an assertive cooked agave and honey note that dries to raucous baking spice and jalapeño, plus a raisin and chipotle note on the finish. Ideal as a digestif.
